I have many delicious, easy vegan dinners that take only 30 minutes or less to make! And they’re made with pantry ingredients you already have hanging around the house. Here are 5 of my favorites to help you with your meal planning this week! Bon appetite!

Curried Jackfruit

Perfectly spiced, and simple to make, curried jackfruit served over basmati rice is a filling meal that is ready in 30 minutes! It's chock full of fresh veggies in creamy coconut curry!

Vegan Chow Mein

A homemade vegan chow mein that’s better than take-out! Noodles are tossed with assorted stir-fried vegetables and a simple sauce that uses hoisin, soy sauce, Chinese cooking wine, and a touch of sugar. The crunchy vegetables, slippery noodles, and salty sauce combine to create noodle greatness!

Lebanese Lentil Soup

This Lebanese Lentil Soup with crushed red lentils, and vegetables in a spiced broth is simple to prepare and only requires a few ingredients. It's done in under 30 minutes! Healthy, vegan, and gluten-free!
