Hello Reader,

One of the problems I hear from readers is that transitioning to a plant-based lifestyle is expensive. I've always found that dairy, and animal protein are much more expensive than beans, legumes, and fresh fruits and vegetables.

Here are a few tips to save you money when you go the grocery store!

  1. Buy seasonal fruits and vegetables. Organic strawberries in winter are expensive! Instead opt for citrus fruits, winter squash, brussels sprouts, collard greens, carrots, and kale.
  2. Buy dried beans and lentils. They are much less expensive than canned, and easy to prepare!
  3. Stay away from processed vegan substitutes. Store bought vegan cheese, Beyond Meat products, and any other food that is trying to resemble an animal based product is higher in cost and not the healthiest option either.

Here are 5 of my favorite budget friendly meals that cost less than $10 per meal, and serve 4-6 people!

Vegan Stew with Chunky Vegetables

This thick and hearty vegan stew is chock full of chunky vegetables! It’s a simple recipe that comes together quickly with a flavorful gravy that tastes like it’s been simmering for hours.

Chole Masala

This simplified Chole Masala recipe, a popular Northern Indian chickpea dish, is cooked in a thick and spicy gravy. It’s ready in thirty minutes! Wholesome, vegan, and gluten-free. Serve with basmati rice and cilantro!

Vegan Thai Red Curry

This Vegan Thai Red Curry is simple to make, and WAY healthier than take out! Made with a combination of vegetables with spicy red curry in a creamy coconut milk sauce, it’s served alongside Jasmine rice and topped with fresh herbs! Ready in 30 minutes, it’s a quick and healthy weeknight meal!

Chickpea Patties

These easy to make chickpea patties have the flavors of the Mediterranean. Moist vegan chickpea burgers are seasoned with fresh parsley, and spices, served on top of a whole wheat bun, with crisp lettuce, juicy tomatoes, and a creamy vegan dill sauce!

Vegan Chipotle Bowl

When you’re craving take-out, make this simple vegan chipotle bowl, complete with fajita style vegetables, seasoned black beans, rice, and avocado. It’s a simple healthy meal that’s full of smoky and spicy flavors!
